Orange Hummus
From The New Enchanted Broccoli Forest by Mollie Katzen.
- 2 15-oz. cans garbanzo beans (chickpeas), rinsed and drained.
- 1/2 tsp. ground cumin
- 1/2 tsp. ground coriander
- 1/2 tsp. ground ginger
- 1/2 tsp. dry mustard
- 1/2 tsp. turmeric
- 1/2 tsp. mild paprika
- 3/4 cup orange juice
- 1/3 cup tahini
- 1/2 tsp. salt
- 3 Tbs. cider vinegar
- 3 medium cloves garlic, minced
- 1 tsp soy sauce
- cayenne to taste
Combine everything in a food processor and purée until smooth.
